Course list at Kappo Shishikura. The kaiseki changes monthly; as of January 2026 courses ran ¥18,000–¥27,000, including Kagoshima black beef A5 grade 12 as shabu-shabu, sukiyaki or charcoal-grilled, wild tiger fugu, and kue.

Courses — monthly; the January 2026 lineup

  • Kagoshima black beef A5 grade 12 sirloin, 160g — shabu-shabu or sukiyaki ¥18,000

    Appetiser, three small starters, a short sashimi plate, the beef as shabu-shabu or sukiyaki, rice from the clay pot with pickles, and seasonal fruit.

  • Line-caught kue (longtooth grouper) course Signature ¥20,000

    A hot pot of line-caught Tsushima kue with Okinawan Agu pork belly, house ponzu and sesame sauce, closing with rice porridge.

  • Kagoshima black beef A5 grade 12 sirloin shabu-shabu course Signature ¥22,000

    Through appetiser, starters, a clear soup, sashimi and a middle course, then the sirloin as shabu-shabu; finished with rice in dashi.

  • Kagoshima black beef A5 grade 12 sirloin sukiyaki course ¥22,000

    The same progression with sukiyaki in place of the hot pot, closing with rice bound in egg and sukiyaki tare.

  • “Number 12” — Kagoshima black beef A5 grade 12 fillet over charcoal, with wild tiger fugu Signature ¥22,000

    Wild tiger fugu sliced thin, chutoro tuna, the sirloin as shabu-shabu or sukiyaki, then fillet and seasonal vegetables over charcoal. The fillet can be changed to châteaubriand for ¥10,000 more.

  • Wild tiger fugu course, with charcoal-grilled milt Signature ¥27,000

    Tessa sashimi, fried fugu, milt over charcoal, the tecchiri hot pot, and rice porridge to close.

From within the courses

  • Otsukuri — the sashimi course Signature

    Raw fish and shellfish flown in that morning from Toyosu and Kagoshima, composed from the day's buying. It appears in all six courses.

  • Owan — the soup course

    A clear dashi soup course; the vessel and its contents change with the season.

To finish

  • Hegi soba Signature

    From the Uonuma region of Niigata, bound with funori seaweed and served on the wooden tray called a hegi. The buckwheat is from Hokkaido; eaten with dashi broth.
